The weekend of February 4th, our heater/boiler broke down which resulted in broken pipes and, consequently, flooding Chef Phoebe's kitchen. We will be closed until all the work is complete - at least into mid March. But, we will keep you updated on our daily progress.
We would love to be able to open on our 18th Anniversary: March 14th. We're keeping our fingers crossed.
No electricity=no lights - all the heaters and dehumidifiers are running off of propane.

Performance Industrial of Glens Falls, NY arrived today for a two day + equipment cleaning job! While one team works inside, the other works on our exterior exhaust system needing this 50' lift.
Chef Phoebe's 3/4 wall is coming down.
It's a big project ...
We brought on a new propane company - AmeriGas. And, I surprised myself with how strong I am with "lending a hand" to install the new tanks. (LOL)
Removal of the kitchen walls that were soaked.
The kitchen ceiling needed to be replaced, as well.
Thankfully, the exhaust hood and ansul system didn't have to come down!
The floor needed to be removed so the sub floor can dry out. Thanks, Hank of DuroClean, for doing an awesome "break-backing" job with not one complaint! You're great!

Yesterday, Chef Phoebe and I had the pleasure of “introducing” The Paddle to Rory Cardinal, the General Manager of Construction Management Direct (CMD). This company specializes in restoration and reconstruction services. We’re in good hands, for sure. CMD will be doing our rebuild. Rory wanted us to walk him through our project; specifically, he was interested in our needs and how we would like to make changes, if any. (Yes!) He was so empathetic towards our plight and very supportive. We feel extremely relieved to have him in our corner. CMD should be able to start in about a week.
